The difficulty names don't show a clear sign of progression, but that's coming from someone who would struggle to tell you the difference between poutine and gravy. The charts in general are mapped incredibly awkwardly, with patterns that aren't very thought out in the "Gravy" difficulty leading to some weirdly playing patterns that just aren't comfortable at all. An example of weird patterning that also happens to not fit the music very well (or at all even) is the transition at 54900 in both difficulties. The quads seem incredibly uncalled for and the hands just don't fit at all as they aren't mapped to anything distinct enough for them to justifiably be there. The entirety of the "Poutine" difficulty seems haphazardly cobbled together and doesn't seem serious at all. The way you choose to anchor in the difficulty is very odd and doesn't fit the song at all, and for some reason the chord density in this difficulty is lighter than that of the previous difficulty which isn't good for set consistency at all. Overall I think you need to plan out your patterns a lot better and redo some of the layering and chord density to flow better with the song.
